Ingredients
– 600g potatoes, peeled and cubed
– 200g fresh spinach, chopped
– 1 carrot, grated
– 1 onion, finely chopped
– 50-70g cheese, grated (cheddar, mozzarella, or feta)
– 35g starch (cornstarch or potato starch)
– 15g breadcrumbs
– Salt, black pepper, sweet paprika – to taste
– Vegetable oil – for frying
Directions
1. Prepare the Mashed Potatoes: Peel, chop, and boil the potatoes in salted water for 15 minutes or until tender. Drain and mash into a smooth puree. Let it cool slightly.
2. Sauté the Vegetables: Heat 1 tbsp vegetable oil in a pan over medium heat. Add the chopped onion and grated carrot and sauté for 3 minutes until soft. Stir in the chopped spinach and cook for 2 more minutes until wilted. Remove from heat and let cool.
3. Mix the Dough: In a large bowl, combine the mashed potatoes, spinach mixture, grated cheese, starch, salt, pepper, and paprika. Mix until everything is well incorporated.
4. Shape the Patties: Take a small handful of the mixture and form it into a round or oval patty. Coat each patty with breadcrumbs for extra crispiness.
5. Fry the Patties: Heat vegetable oil in a pan over medium heat. Fry each patty for 3-4 minutes per side until golden brown and crispy.
6. Serve & Enjoy: Serve hot with garlic yogurt dip, sour cream, or ketchup.
