1. Squeeze the lemons
- Roll the lemons on a work surface to release the juice, then cut them in half.
- Squeeze the lemons using a citrus press or by hand, removing all the seeds.
- Measure out 1 cup of fresh lemon juice and set it aside.
2. Prepare pineapple juice:
- If using fresh pineapple, blend the pineapple pieces in a blender until smooth, then pass the mixture through a fine-mesh sieve to extract the juice.
- Alternatively, for the sake of simplicity, you can also use unsweetened pineapple juice bought in a store.
3. Make the simple syrup:
- In a small saucepan over medium heat, mix 1/2 cup sugar with 1/2 cup water.
- Heat gently, stirring occasionally, until the sugar has completely dissolved (approx. 2–3 minutes). Remove from heat and let cool.
4. Combine the ingredients:
- In a large jug, mix the fresh lemon juice, the pineapple juice, and the cooled sugar syrup.
- Add 4 cups of cold water and stir well.
- Taste and adjust the sweetness or acidity by adding more sugar, lemon juice or water as needed.
5. Chill and serve::
- Place the lemonade in the refrigerator for at least 30 minutes to ensure it is completely chilled.
- Serve over ice and garnish with pineapple slices, lemon wedges or fresh mint for a special touch.
Optional: Make it sparkly:
- For a sparkling version, replace 2 cups of water with sparkling water or soda water just before serving.
- Stir carefully so that the mixture is not lost.
