Instructions
1. Prepare the Vegetables: Chop the green bell pepper, onion, and tomato into small pieces.
2. Cook the Vegetables: Heat olive oil in a large pan over medium heat. Sauté the onion until it begins to soften.
3. Add the Vegetables: Add the green bell pepper and tomato, and stir well.
4. Season and Simmer: Season with salt and black pepper. Add water and tomato paste, stirring to combine. Cover and simmer for a few minutes.
5. Add the Noodles: Add the instant noodles, breaking them up slightly. Cover and cook for a few more minutes.
6. Combine and Cook: Stir the mixture to combine all ingredients. Cover and cook until noodles are fully cooked.
7. Optional Additions: Add mozzarella cheese and let it melt. Garnish with fresh parsley if desired.
8. Serve: Serve hot and enjoy!
