Directions
1. Crack and whisk the eggs
Crack the eggs into a bowl. Add a pinch of salt and a splash of milk or cream if you prefer a creamier texture. Beat the eggs with a fork or whisk until the yolks and egg whites are well blended. You don’t need to overdo it—just whisk until you get a smooth mixture.
2. Heat the pan
Place your nonstick frying pan over medium-low heat. Add about half a tablespoon of butter. Melt it slowly, swirling it to coat the bottom of the pan. Be careful not to let the butter brown.
3. Boil eggs
Pour the beaten eggs into the pan and let them stand for about 20 seconds . Then, using a spatula, gently push the eggs from the edges to the center. Let them stand briefly, stirring constantly. Cook the eggs until they are almost set, but still slightly soft and runny. This will take about 2–3 minutes.
4. Finish
When the eggs are almost done, remove the pan from the heat. The residual heat will finish cooking them, resulting in soft, fluffy, and creamy scrambled eggs.
Helpful tips
Cook slowly and at a low temperature : Patience is key. Cooking eggs at low to medium heat prevents them from becoming rubbery or overcooked.
Butter > Oil : Butter adds a richer flavor, but if you avoid dairy, oil will work too.
Stir gently and frequently : This keeps the eggs light and creamy and prevents uneven cooking.
Tricks to enhance your eggs
Ingredients : Scrambled eggs are a blank canvas! Add grated cheese, chopped herbs, sauteed vegetables, or even crumbled bacon. Be sure to stir them in during the last minute of cooking to avoid overcooking.
Season at the right time : Salt draws out moisture, so it’s best to add it towards the end to keep the eggs fluffy and not watery.
Let it rest : After cooking, let your eggs rest in the pan or on the plate for a few seconds to allow them to set.
Flavor enhancers
Cheese : Add cheddar, feta, goat cheese or any other cheese of your choice one minute before the end of the egg cooking time.
Fresh herbs : Chives, parsley, dill, or cilantro make a fresh, delicious topping. Add just before serving.
Avocado : A few slices alongside – or mixed in – add richness and texture.
Spices : Try a pinch of paprika, a dash of cumin, or a dash of hot sauce for extra flavor.
Scrambled egg styles
Soft and creamy : Cook slowly at low heat, stirring occasionally, until just set. These are rich, velvety, and delicious.
Firm and fluffy : Cook over medium-high heat, stirring constantly, until firm. Perfect for burritos or breakfast sandwiches.
Microwave option (for busy mornings) : Crack eggs into a microwave-safe bowl, add a splash of milk, and whisk. Microwave on high for 1-2 minutes, stirring halfway through.
